Turkey Biryani

This yummy one-dish meal is too good not to share.
Ingredients:
10 oz ground turkey
1 Tcurry powder
1 1/2 pkg frozen peas
2 T light butter with canola oil
2 cloves garlic, minced
1/2 tsp grated ginger
3/4 cup basmati rice
1 1/2 cups low-sodium chicken broth
1/4 tsp salt
1/4 tsp pepper
1/2 cup chopped cashews
Instructions:
1. coat a dutch oven with cooking spray and place over medium-high heat; add turnkey and 1 1/2 tsp curry powder
2. cook turkey 5 min or until brown; remove from pan and stir peas into meat
3. heat the light butter in dutch oven; add remaining 1 1/2 tsp curry powder, garlic, ginger, rice, broth, salt and pepper
4. bring to boil; cover, reduce heat and simmer 12 minutes or until liquid is absorbed and rice is tender
5. stir in turkey mixture and cashews
6. divid into three servings
Refrigerate leftovers
