Tbone Steak 50 or 100 calories/oz?

So I'm trying to figure out my dinner and I looking to have a decent sized tbone steak. I looked up the calories and they range from 50 to 100 calories/oz? Any idea why the spread? Should I just trim it close and split the difference at 75? Usually, I don't see this big a spread on values (but then, usually I don't eat steak).

Advice please?

    Yeah, use raw weights and USDA numbers.

    100 seems high, using crazyravr's post and the USDA values that works out to about 56 calories per 28 grams (call it 50cals per ounce).

    The USDA also has listings for the thickness of the fat that remains after trimming. Be sure and pick the right one.

    And for the grade of meat (higher grades have more marbling, so more calories per gram)

    Tbone is a "tough one" because of the bone.

    You could commit sacrilege and separate the tenderloin from the strip loin and weigh and log each of them separately!

    See above about grade and trim!

    However do note that it is only a small portion of your meal and day and not a daily item... so being slightly off could be ok.

    Usually, what I do with the bone and fat is weight it, eat it, re-weigh the scraps. I was quite taken back by the 100% variation in values thought. I'm trying to get a bit more accurate, so I didn't just want to pick the easy one. The USDA thing was a great hint, as it has both grilled and raw. The grilled number is 58/oz, lean only. I'll probably go for that. In retrospect, if I would have just shot from the hip and picked the middle number, it would have been OK, I suppose.
