From resistance to fatigue: What you exercise routine you recommend for a come back to working out?

Hi! I've been absent from MFP community yet trying to stay in track eating healthy and balanced. However, when it comes to my exercise routine I've been off, for almost a year manifesting its effects on feeling fatigue & tired just doing basic exercise. I've also seen looking a bit more jiggly and less toned (even when I weigh less than ever). I guess I've loss some muscle and gain some fat.
I'm currently reflecting on why I "stopped" exercising. I believe I was pretty ambitious of following 60 minutes every day, being a full time intern without a lot of time.
Figuring out a way of establishing realistic goals that I could sustain, what would you recommend as a work out routine?
My goal is to feel more energetic and take care of my body.

Swimming. Swimming. Swimming. It's a gateway to getting your endurance and strength back.2

Anything that gets you excited to be active. I prefer to avoid the gym and get my workouts done in the outdoors. Biking, kayaking, paddle boarding, hiking, even just walking are all great things to get you back in shape. Walk up and down stairs or go for walks on your lunch break. Wake up 30 minutes early and get in a walk, run or ride before work. If you don't live to far from work bike to work. Get creative and make it fun.1

I burned out awhile back when I pushed myself too hard, it was during a jog where I wanted to run faster than what my body could handle, I took a month off so my body could heal and get back to form and slowly ease myself back into running. Nowadays, I learned to listen to my body and learn when to back off.1
