Vegan 100 Calorie Muffins

These would have to be the best muffins I have ever made!
Last night I had a serious sweet tooth, s I got a little adventurous and attempted to whip up a low calorie muffin for my son and I.
Here is what I came up with


1 package soft tofu
1/2 Cup Almond Dream Milk
1 Cup Whole Wheat Flour
1 Cup Quick Oats
1 Tsp Baking Soda
1 Tsp Baking Powder
1 Tsp Salt
3 Tbsp Hulled Hemp Seeds
2 1/2 Tbsp Shredded Coconut
1 Cup Fresh Blueberries

In a large bowl, 'Cream' the almond milk and tofu.
In a seperate bowl mix all dry ingredients.
Slowly add dry ingredients into 'creamed' mixture.
Fold in the blueberries and scoop into muffin tin.
Bake at 350 degrees for 20 minutes.

Makes 12 muffins.

These were simply amazing!
