Will I gain weight if I eat like this once a week?

So I don't normally eat this much junk (aside from having 1-2 protein bars a day), but would I end up gaining weight if I ate this way one day a week?
Whole container of vegan mac and cheese
1 small apple
1 bowl of strawberries
2 rice crackers witb 1.5 tbsp almond butter
1 150 cal protein bar
2 medjool dates
2 ginger candies
2 squares of unsweetened bakers chocolate
1 whole pint of halo top ice cream
1 oatmega protein bar
Total: 2000 cal
My tdee is anywhere between 1500-1600 (best guess) and I normally eat just under 1500 the rest of the week. I work out 3 times a week with resistance bands and weights (45 min) and get 5000-6000 steps a day.
Current weight is 115 pounds at 5'4.
I've been trying to maintain, but always end up binging a few times a month.

If your TDEE is 1600 or so but you eat 1500 the rest of the week, eating 2000 one day won't do anything. A lot of people follow a weekly calorie goal to save up for splurges, meals out, or special events.4

That TDEE seems like a sedentary TDEE -- I know when I run your stats through some online calculators, they actually come closer to 1700 or 1800 when you include your exercise.
Do you think it might be helpful to eat a little more during the week -- instead of a 200-300 calorie a day deficit -- instead of then binging when you get too hungry?0
