Who are some people that are motivated and disciplined when it comes to food. any recommendations on who to follow would like to stay motivated.

Forget about motivation and other people, and build and stick to your own sustainable habits. That's what people who are disciplined about food, do.2

Um, I once heard a handsome fellow say, "I like to eat". That, rather than motivation and discipline re: food, was motivation and discipline re: work. What seems to be the issue you are dealing with?0

Motivation is only going to carry you so far; eating within your calories, aligned with your preferred way-of-eating, and exercising is easy when you feel like it, it's the habits and structured discipline you create for yourself to keep you on-plan when you're not "feeling it" where you'll find the keys to success. This is a very individual thing based on your goals, pitfalls, and vices; you have to look introspectively when you fail, to learn why and take measures to mitigate those factors. For many, this can take the shape of not buying or only buying certain foods, pre-planning or prepping meals, staying away from certain high-risk situations.3
