Coconut Flour recipes

Hello all - has anyone tried baking/cooking with coconut flour? Does anyone have good recipes that they really liked - specially a bread? I would love to get back to having sandwiches again. I have been put on a low carb diet. Doctor said no breads or pastas. So I am trying to find news ways for breads. Sandwiches are so much easier for me to take to work for lunch.

2 tbsp coconut flour, 1 tbsp milk, 1 tbsp oil, 1 egg, salt/pepper - mix in a buttered ramekin and micro for 2 min. Coconut flour is very absorbent so you may want to experiment with the amount of milk. This will make a small “bun” like shape which can be sliced and toasted nicely. I’ve made this with chickpea flour and prefer that over the coconut flour.2
