Anyone have some good healthy spanish food recipes? Arroz con pollo, mofongo, Asopao, Moro de guandules, mangu, empanadas etc.

I'm looking for authentic Dominican, Cuban, Puerto Rican, Mexican food , etc.

Please feel free to share your recipes under this forum , or any tips that you might have is also welcome..

    My repertoire is limited to Spanish food from Spain, I'm afraid. This recipe is actually Portuguese, is totally easy and makes what is basically boiled carrots taste amazing. Serve warm or at room temperature as a starter with a little bread or as part of a tapas spread.

    I make Pernil with pork tenderloin. It comes two in a package and I use both.

    Marinate over night:
    1 tbsp veg or olive oil
    1/4 cup white vinegar
    5-6 garlic cloves, crushed
    2npackages sazon (I use Badia brand because it doesn’t contain msg)
    1 tsp salt
    4 teaspoons black pepper
    1 teaspoon oregano

    I sometimes cook it in slow cooker for 8 hours low. Or I cook it according to package directions in oven.

    I serve with brown rice and black beans

    Black beans: 1 or 2 cans rinsed black beans, 1 diced green pepper, 1 diced onion, 1 8oz can tomato sauce, 1 packet sazon, s & p. Cook in sauce pan for 20-30 mins.

    Ajo blanco is one of my favourite Spanish dishes. Not exactly low calorie as it contains almonds and olive oil but so unusual and delish. I used to peel the grapes, but if you halve or quarter them you get the same mouth feel as peeled grapes.
