When you know you’re not gonna do gym on a certain day do you change your activity levels that monitor how many cals you should consume or do you keep it the same?

Exercise isn't part of your activity level. It's based on your day-to-day life.

No - I eat more when I exercise, activity level is a constant (your average activity level from your lifestyle and job excluding intentional exercise). It's exercise that is the variable.
