So I just discovered a thing. French Toast in a Mug. You can make this however you would like, and it took me less then 5 minutes to make start to finish.
Here's the link to a good base recipe.
2 slices of white bread
¼ cup milk or cream
1 egg
1 tsp. white sugar
¼ tsp. cinnamon, ground
¼ tsp. vanilla bean or extract
Instructions:
Grease one mug with a tiny bit of butter.
Add the egg, cinnamon, sugar, vanilla bean, milk and beat together.
Add the diced bread and push it down into the egg mix.
Microwave for about 1 & ½ minutes.
Serve & Enjoy
You can lighten this up by using a spritz of cooking oil instead of butter, and to use lowfat milk, or possible milk alternative such as almond milk. You could probably also use just egg whites.
For mine I sweetened it up with a dash of sugar free caramel syrup and used 2% milk. I also used whole wheat multi-grain bread and not white. I also mixed my bread and egg mixture instead of pressing down, just to ensure good covereage on my bread. It turned out great! I definatly will be adding this to my breakfast/lunch rotation & thought I would share too.
FYI-Mine turned out to be 304 calories before adding a drizzle of maple syrup on top. Seemed to be filling, and fairly low cal. YMMV.
