Your favorite fish rub
I like honey brown sugar and sea salt plus some chilli flakes if you like it spicy.
Smoke the fish at as low a temperature you can manage undr 200' for a hour to hour and half depending on temp.
Left overs make excellent additions to Salads and over rice Or in tacos also makes a great Salmon cucumber boat.
Just prepare salmon like a tuna sandwich but instead of bread use cucumber. Skin the cucumber and cut Lengthwise then dig out the seeds. Then fill wth smoky fishy goodness.

    Also, if you don't want to smoke your own fish, Trader Joe's has a smoked trout product that's really nice. Delicious as a salad for sandwiches or crackers.
