Any ideas for fennel?

Just got two fennel in the supermarket, I’ve heard that they’re really good for you but I’ve no idea what to pair it with or how to cook it, any suggestions?

Thinly sliced with olive oil and lemon juice as a salad works well. Stewed in big chunks with root vegetables or wine or meat or all of the former works well, too. White pizza (yeast dough) with fennel and sour cream/creem cheese/goat cheese and/or salami and/or prosciutto works well. I personally also liked my attempt at stewed fennel with pear and goat cheese.3

To add to all the ways @alquamire mentioned, roasted fennel is delicious too....

Grill roasted fennel is wonderful and pairs well with fish and grilled or roasted chicken. I usually micro wave it for a couple of minutes to cook the inside or it's a little hard. Then coat with Olive Oil, sprinkle a little sea salt and black pepper and grill.1

I like fennel in soup.2

* Fennel citrus salad.
* Shaved fennel with other herbacious greens salad served with grilled steak. Maybe add some shaved parmesan cheese.

I do this a lot - quick and easy
caramalised fennel with goats curd/cheese
I also did this last night
fennel crumble gratin but it’s pretty rich!!!

Fennel Caviar
Saute 3 cloves garlic, 1 shallot, and 2 tbsp onion in olive oil 5 minutes. (The original recipe calls for 3 tbsp. I usually use 1.)
Add 3 cups diced fennel and cook 10 minutes
Add salt, pepper, and fresh thyme to taste and cook 4 minutes.
Pulse in food processor. Enjoy plain or spread on bread, crackers, rice cakes, etc.1
