my OMG lunch salad today

I was so happy with this combo that I just HAD to share it. I don't get this week's CSA farm vegetable delivery until this evening, so I was out of salad greens and a tad puzzled about what to make for my lunch. This is what I came up with:
1 roasted, chilled, chopped beet (small sized)
1 diced radish
1/2 a lg carrot diced
.6 oz of roasted, salted sunflower seeds
1.0 oz diced medium cheddar
2 TB of my homemade sweet and spicy balsamic vinaigrette
whole combo = 361 calories
not only was it delicious, but it was amazingly beautiful as well!

    I'm at work, so don't have the recipe handy, but its a deviation from the smoky paprika balsamic dressing recipe from allrecipes.com (ingreds posted below). I make it different every time just because I use what I have on hand. Sometimes I have onions, sometimes scallions. I use balsamic instead of red wine vinegar. I also use ancho chili powder instead of paprika (and more of it!).

    * 1/2 cup red wine vinegar
    * 1/3 cup honey
    * 1 tablespoon stone-ground mustard
    * 1 tablespoon lime juice
    * 3/4 teaspoon ground black pepper
    * 3/4 teaspoon salt
    * 1 1/4 teaspoons smoked paprika
    * 1 clove garlic
    * 2 tablespoons chopped onion
    * 1/4 teaspoon oregano
    * 1 pinch white sugar (optional)
    * 1/2 cup olive oil

    my favorite vinaigrette is very simple if you like it tangy . Is a German grainy mustard and balsamic and garlic, little or no calories. Sometimes a pinch of truvia or sugar and a splash of olive oil and shake together
