Training for 5k

Any advice welcomed!
October 27th is Día de los Muertos 5k. I did it last year, finished in 49 minutes and I want to beat that time this year!
I’ve been jogging more often, it’s not my favorite workout choice but I do want to build my endurance. I have a sedentary job however outside of work I’m pretty active. And recently kicked up my workouts to 5 times a week, my workouts vary from home HIIT videos, lifting weights, Zumba, hikes and gym machines like the elliptical. Not to mention I’m a mother of 2! What works for me is a low carb lifestyle so that is what I’ve done and am doing.
Besides being overweight, I’m healthy. My all time highest weight was 242, i have yo-yo’d A LOT! (So upsetting)
I currently weigh 207, by October 27th I have set my goal to be 189 AND to finish the 5k below 44 minutes!
Any 5k pointers!? Jogging pointers!?
