I really like this chickpea burger recipe: https://www.geniuskitchen.com/recipe/chickpea-burger-338863
Pretty easy to make - the ingredients all go into the food processor, and then you fry the patties.0 -
Here are a couple that we use regularly for the quickness of prep. :-)

two ingredients- steak of some sort and Lipton's blue box onion soup mix. Well and water. Mix the soup mix with a cup of water, let it go all day on low. So good! Match it potatoes or rice, whichever you prefer.0

A variety of freezer meals is a lifesaver. We had a crazy night this past week and I made spaghetti w/ meatballs. I have frozen meatballs (that I made beforehand and froze), heated them up in the microwave. Warmed up a jar of Prego and boiled some spaghetti. Made some garlic bread for the family and made a quick side salad for me.0

http://www.kraftrecipes.com/recipes/velveeta-cheeseburger-macaroni-52456.aspx except I use a small can of tomato sauce in place of the ketchup
http://www.kraftrecipes.com/recipes/cheesy-beef-corn-chip-skillet-55264.aspx I double this recipe for 4 of us, lol I have a teeanage son who would eat the entire pan if I let him
http://www.kraftrecipes.com/recipes/stove-top-one-dish-chicken-bake-57497.aspx I use cream of celery instead of cream of mushroom. And you can add a can of small mixed veggies also. I prefer to just eat my veggies on the side0 -
Pasta or zucchini with marinara sauce... you could top with some shredded mozzarella
Pasta with pesto and vegetables
Tacos
Sloppy joes or Burgers
Pizza using pre made crust, flour tortilla, garlic bread, bagel, pita, mushroom as a base
Stir fry, rice
Scrambled eggs- could be made into a sandwich or burrito
Grilled sandwiches with soup, salad or fruit
Soup- make a big pot and reheat... can freeze for later meals
Big salad
Oatmeal
Slow cooker pork carnitas https://therecipecritic.com/slow-cooker-pork-carnitas/
I use leftover pork for bbq sandwiches or pulled pork chili.
Slow cooker shredded Korean beef tacos https://www.ayearofslowcooking.com/2011/11/slow-cooker-shredded-korean-beef-tacos.html
I use the leftover meat for sandwiches as well.0 -
Eggs! Scramble a big pan of eggs with chopped ham, green onion, bell pepper and cheddar cheese. You can buy frozen hash browns or even just do toast or waffles. If you have time, cook up some bacon too.
Baked potatoes. Toss them in the oven. Put out a tub of sour cream, a bag of cheese, a bag of spinach and a jar of salsa. Warm up a can of baked beans. You could also defrost some frozen meatballs and warm them in the microwave. Then let everyone build their own plate.0
