51 Calorie Banana-Cranberry-Chocolate Chip Cookie

Yes you read that right: 51 calories. No eggs, no flour, and the only sugar is found in the fruit and the chocolate.

3 very ripe bananas
2 cups rolled oats
1/2 cup mini dark chocolate chips
1/4 cup dried cranberries, chopped
1/4 cup plain almonds, chopped
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract

1. Preheat oven to 350 F.
2. Mash bananas and then stir in all the ingredients.
3. Bake for 18-20 minutes (I did 20) on a greased cookie sheet, or whenever they look lightly brown. This recipe makes 36 small cookies.

I love these. They're very banana-y (obviously) so if you don't like banana, I wouldn't go for it. Honestly these are great because they can be a dessert (cue sweetness from the fruit and chocolate) or a breakfast (kind of like a portable oatmeal). They're also VERY adaptable. Don't like cranberries? Try raisins, apricots, or dates. Don't like almonds? Add walnuts, pecans, or just omit altogether and increase the quantity of dried fruit. Don't like chocolate? ...What's wrong with you?
