I work on the road so normal cooking is out the window. I bring a Forman grill and electric skillet with me any one have any good recipes?

Wow! That's pretty hard on the culinary variety options. Have you explored marinating before using your skillet? I love curry and spicy foods so regularly mix up my own marinade with olive oil and lemon juice and whatever spices I feel like then use a zip lock bag to marinade my meat for an hour or so before cooking. Gives you a bit of variety and you decide the flavour. Doesn't have to be hot but you have a million ways to cook chicken this way.1

Doing protein on the Foreman grill seems kind of obvious. I get lot of hits if I google "one skillet dinner" though I guess the biggest challenge with cooking on the road is not having access to a store cupboard. I would travel with a tub of margerine, stock cubes, salt and pepper. A small can of regular cola is a great marinade for grilled meats. The acidity acts as a tenderizer, and the sugar caramelizes while cooking. We used to bring a can of coke and some soy sauce for marinating BBQ meat on camping trips as a kid.
If you are travelling by car so not limited by space I would consider adding a magic pot to your arsenal in order to cook starches or stews. I'm assuming you have a swiss army knife for chopping up a potato or carrot which can go unpeeled. If the magic pot is prohibitively expensive or large, maybe a small rice cooker.
If you are not tired of sandwiches you can do a lot with your current set up. A fried egg, cheese spread, lean cold cuts, some salad and sliced tomato or cucumber with fresh fruit for dessert is a reasonably balanced meal.

I am thinking of how I would try to get a balanced diet living on the road. Would probably try to snack on fresh fruit or pre-cut vegetable sticks dipped in commercial hummous or tzaziki. In the evenings would use prepared salads with dressing satchets marketed to lunchtime users in the supermarket. Also prepared meals marketed to lunchtime users warmed up in the electric skillet instead of a microwave.0
