Whole smoked salmon

We have a house guest for the weekend and have been gifted a smoked salmon. Yay! What are some things I can do with it to have a decent meal without blowing my calories? I get about 1600 a day before exercise, and would love to come up with some 4-500 calorie dishes. Bagel and cream cheese being a given, how else would you eat it?

    Eggs Benedict, on top of scrambled egg, in a Nicoise, courgette or mixed bean salad, in a nice soup, on it's own as a protein rich snack, in cucumber and cream cheese rolls, with a nice bit of brown bread and butter, in a salad wrap or sandwich... and you could gift some to your friends/neighbours?

    There's something uniquely special about the combo of smoked salmon (or gravlax) w/eggs.

    As mentioned already, smoked salmon w/scrambled eggs is particularly delicious. I've eaten it at many resturants where it is served. While I prefer the classic presentation, smoked salmon would also be a great substitute for Canadian bacon in Eggs Benedict, which is my absolutely favorite dish for breakfast/brunch.

    Just Google "salmon, eggs & recipe" for more ideas in this regard.

    Omelet, blinis, crêpes. These are all great, but they are not low-calorie dishes.

    Apart from inviting me - just eat it up, it's delicious with bagels and cream cheese, maybe finely chopped onion - it freezes very well. Slice it up and portion it out, and take it out to thaw in the fridge overnight. It keeps for 5-6 days in the fridge if it's in an airtight container.

    Looks like maybe eggs for dinner! It's not something I buy often for myself as I didn't eat it growing up, an unfamiliar food. I got some capers and jalapeno cream cheese to go with as well.

    Not exactly low calorie, but you can do it on top of avocado toast in a similar way to how you would on top of scrambled eggs! Just manage the portion size (2 slices by my recipe is about 750kcal, so one will be ~400, and it's very satiating due to the fats). It's also nice tossed into some linguine right after cooking, with some green vegetables and a light creamy sauce (can make with almond milk or Greek yoghurt to lower the calories here).

    I was going to suggest a pasta dish too.
    I usually make a creamy sauce that includes wine, mascarpone, garlic, onions, then add shredded salmon, cooked and toss in pasta. Fast and easy. You can do a lower cal aside too. Philadelphia Light would work.

    Or a fish pie. Cook chopped veg of choice, add salmon, mix in a little cream, top with mashed potatoes, cook in oven, serve with salad.

    You can make a deconstructed Philadelphia roll, or the actual roll if you can roll sushi and make sushi rice.

    your choice of rice (you'll need to use a sushi rice recipe if you go that route)
    smoked salmon
    cucumber
    cream cheese
    nori

    Or, just serve it as the protein component. No need to mix it into anything. You could do asparagus, cous cous and smoked salmon.

    For snacks you could wrap a slice around a cheese stick. Or eat on top of a rice cake.

    I made some with farro and the capers with some broccolini on the side, and I still have cals so there might be a mini bagel in my snack future... I like the avo toast idea too, I'll have lots of cals tomorrow so maybe that can be part of lunch.

    Put some on a plate, add a couple slices of avocado, sprinkle with capers, add some chopped onion (I like pickled onions), chop some hard-boiled egg on it, and sprinkle with a good quality vinegar. Eat with a few cornichons (or your favorite pickle) on the side.
