Today’s Salad is brought to you by the letter C
This turned out really tasty, if you like a peppery slaw.
1 cup cider vinegar
1 TBS honey
3 clementines - chopped (keep the juice!)
1 TSP each Coriander Seeds & Peppercorns (i used mixed, you can use any you like) - roasted and crushed
Mix all the above and let it sit in a BIG BOWL or POT
While you
Chop up a head of cabbage into bite size pieces (or smaller, as you prefer)
Dump the cabbage into the dressing and mix it all up really well, and leave it sit overnight.
Stir before serving.
There is so little sugar in this mountain of slaw that I’m calling it sugar-free food from a nutrient POV. (YMMV ;-))
