Sherbet bread

For some reason I having been wanting ice cream bread today. It tastes more like a muffin or lightly sweetened biscuit to me, but I like it.
Anyway, that got me thinking about the possibility of using sherbet instead of ice cream, not for the decrease in calories, but for the citrus flavor. I was thinking along the lines of mimicking lemon Muffins.
I wonder if it will actually work with sherbet being not nearly as rich and creamy as ice cream.
Has anybody tried this? If so, how was it?
