Meatloaf with veggies

I saute onions, mushrooms, sometimes sweet peppers, spinach and arugula (chopped), and I add them to the ground beef or turkey, but don't overcook the veggies. I also use Rotel mild (canned tomatoes with green chilies) instead of tomato sauce or ketchup. Just work the amounts into your recipe and the recipe builder will calculate the calories and macros.
Note: you can also steam broccoli florets, mash them and add them to the meat.1 -

I know this is a crazy idea, but I've made this before and it was amazing cold. It wasn't bad warm, but it was better like leftover meatloaf. Really good that way. Totally vegan. It's actually easier to make in muffin tins. Like a little personal meatloaf.

Lasagna and vegetable lasagnas are another great way for sneaking in veggies. Also shepherd and cottage pies.0
