I don't know if you even actually call this a recipe but other than taking a veggie tray, my favorite thing to take is mini sandwiches.
Get a package of the size rolls below (can be white, wheat, whatever.) Don't tear them apart. Instead, slice it open like it's one big sandwich. Layer on meat and cheese. Put the top back on. Cut apart into individual sandwiches. Super easy.0 -

I just made these buckeyes for work today and they turned out great. This recipe made 20 buckeyes.
PEANUT BUTTER FILLING
3 cups peanut butter powder (pb2)
3/4 cup powdered sugar
1 tsp salt
1 cup water
1 scoop vanilla protein
CHOCOLATE COATING
8 oz. dark chocolate chips

Pasta salad is an easy throw-together and you can pretty much use whatever flavors you have on hand. I often do one with rotini, italian or caesar dressing, shredded or diced mozzarella, and chopped up pepperoni and salami. Totally not healthy at all. You can do lighter versions with shredded veggies and light dressing. I imagine you could toss the pasta with some broccoli slaw and a light dressing.
Potato salad is also usually a crowd pleaser. This is a great one that I frequently make, though I often sub half the mayonnaise for sour cream: https://www.geniuskitchen.com/recipe/red-hot-blue-potato-salad-the-original-436757. If you want to do a loaded potato salad you can also mix in shredded cheddar and crispy cooked bacon. For a potluck I would recommend just sprinkling the bacon over top the day of so it doesn't get soggy.
People also LOVE deviled eggs. You can do the basic recipe where you just mix in enough mayonnaise to get the right consistency from the yolk, plus a hit of mustard, salt & pepper (maybe pickle relish if you like them that way). When I'm feeling extra though I will mix in shredded cheddar and chopped cooked bacon with the filling. Those always go QUICK. I've also had a version where cooked crab is mixed into the filling and you sprinkle some Old Bay on top.
Uhhh if you want healthy there are always the boring veggie and fruit salad options. Tzatziki is a pretty decent lower calorie dip that can be served with veggies, pita, and all sorts of crackers. I've been making this one a lot recently: https://thewanderlustkitchen.com/authentic-greek-tzatziki/

Skewers! And you can cook it all on 1 pan and then assemble. Chicken breast diced into bite sized pieces s, red bell pepper, yellow bell pepper, red onion. Cut the veggies into squares before putting on the tray. Drizzle in olive oil and choose seasonings
Choose a seasoning profile
Mexican - taco seasoning
Asian- teriyaki, sesame seeds
Italian- garlic, oregano
Indian- curry sauce
American- bbq sauce
Arrange and serve. You can do dipping sauce too. Guacamole, peanut sauce, marinara, yogurt sauce, ranch etc etc.

I don't have any recipes but I love seeing a tray of brownies at a potluck. Someone has to bring dessert. Be that hero.
Betty Crocker brownie mix is just fine.3 -
At my dh's last job they had potlucks frequently and people tended to bring desserts and forget about other food. They loved it when he brought meatballs.

I've made this one a bunch for family gatherings (extended family). I have 5 brothers and sisters and they are truly meat/potatoes people but have loved this recipe.
