It really depends on what type of diet you are following. I am Keto so I prep Keto Almond Bread, different meats, cook bacon, make fat bombs, pre-make salads, that sort of thing.2

For breakfast: Buy yourself a muffin tin to make omelette cups. Put one egg in each cup along with whatever else you want to add that fits your diet, and bake in the oven. They reheat well. You can also cut fruits ahead of time to have on the side and put them in sandwich bags.
For prepping lunch/dinner, the slow cooker is our go to option. I strongly recommend getting one if you don't already have one. Favorite simple recipe is this: 2 pounds chicken breasts (boneless/skinless), 1 cup low sugar barbecue sauce, 8 ounces of low fat cream cheese. Slow cook the chicken in the barbecue sauce on high for 4 hours. Then shred with a fork and mix in the barbecue sauce. Add the block of cream cheese and let it cook for 5 more minutes to soften. Then stir in the cream cheese. It makes 6-8 servings, tastes amazing, and stays low calorie.2
