broiled quick chicken and curry

3-3oz boneless, skinless chicken breasts or cutlets
1/4 C Apple cider vinegar
Juice from 1/2 lemon freshly squeezed
2 packets of Stevia sweetener

Cooking spray

Dry rub: 1/4 tsp each per 3 oz chicken.
Curry powder
Chili powder
Ginger powder
Basil

Fresh ground sea salt and pepper to taste.


Preheat oven (I did mine in a toaster oven) to Broil.

Using the first 3 ingredients, marinate chicken for 20-30 minutes. While chicken is marinating, mix all the ingredients for the dry rub in a small bowl. You may have some rub leftover, depending on size of chicken and whether you rub both sides of the chicken. Leftover rub can be reserved in a small baggie for later use.

Place marinated chicken on broiler rack that has been lightly sprayed with cooking spray. Generously sprinkle one or both sides of chicken with dry rub. Add salt and pepper to taste. Broil 10-20 minutes, depending on thickness/cut of chicken. Enjoy!!! Goes great with steamed broccoli and cauliflower sprinkled with a little of the dry rub.
