Is this a healthy diet?

I checked serving sizes and its about one months worth of food. At my area itll cost around 265 dollars a month. You would get 1,950 calories a day. Is this healthy?

Just make sure you're getting enough protein and fat with that. Are you using full fat dairy? If you are going vegetarian, do a little research on the nutrients that you may be missing. Eating the same type meals with very little variety of vegetables over and over can cause you to not reach your nutrition goals over the long run, but in general it looks pretty good.0

OK so I'm not a nutritionist and you didn't provide any insight to your level of activity and other things that would factor into diet choices. But I would say that it's a pretty good start. Here are a few additional ideas to consider:
- If you are really interested in a vegetarian/vegan diet and your greatest nutritional bang check out nutritionfacts.org. Lots of insight into healthy diet options.
- In general, there doesn't appear to be a lot of colored vegetables like red bell pepper, broccoli, beets, etc. These will typically yield the greatest nutritional density. In particular, consider red cabbage. It is the cheapest source of antioxidants. If you buy beets in produce look for the ones that come with their greens, which are very healthy in themselves. Carrots buy a 5lb bag are also cheap and will give you your Vit A.
- Replace lettuce with a dark green leafy vegetable (Spinach, mixed greens, etc.). If you are thinking iceberg there is no nutritional benefit.
- Beans are good but if you are planning on using canned, dried beans that you can get in bulk are a far cheaper option and pretty easy to prepare. Dried lentils are another cheap and great source of protein. Perfect for soups and stews.
- Greek yogurt, anther great protein source already on your ingredient list, is a perfect substitute for sour cream that you can doctor up with your spice mix.
- Speaking of taco seasoning, you are much better off making your own using bulk spices. There are lots of taco seasoning recipes on line that are extremely easy to prepare and using bulk spices will cost you pennies to make a whole lot. The commercial versions are loaded with sodium.
- Straw/banana frozen blend - ok, but there are better frozen fruit alternatives particularly frozen wild blueberries which are really high in anti-oxidants (especially the wild version). In general frozen fruits and vegetables are quite economical and retain their nutritional value.
- Potatoes are okay but sweet potatoes are much better nutritionally and as we approach Thanksgiving you can probably find some sale prices.
- Finally, if you are not planning on including meat in your diet you need to add a vitamin B-12 supplement. That's the one essential a vegetarian diet can't provide.

Have you seen a doctor regarding your cancer and lung concerns yet. I think that was the part that was most concerning to some of us.
