Zucchini /courgette SOS!

Help ,e I'm drowning in courgettes (aka zucchini's for my state side friends) we have a lot net and they just keep growing!

I've thought of about 10 different meals so far including courgette pie, fritters, a cake and even soup but I'm struggling to find healthy recipes...

Does anyone have any ideas?

I mix with egg whites, ripe banana and cinnamon and put in muffin tins. They are like little sweet egg bakes. Love 'em

I'm really annoyed that I can't find the recipe I used years ago because they were great - fat-free, dairy-free, gluten-free, added-sugar-free cupcakes that people genuinely couldn't tell from the 'real' thing...
