Do you think going over your target heart rate is dangerous or not? My heart rate regularly reaches max heart rate for age (I’m 31), this can be either when jogging 5k or simply sprinting 100m.

Estimated max HR and true max HR can be very different numbers.
If you are regularly hitting your calculated maximum without giving maximal effort to the point of collapse/exhaustion then it's clearly not your true max HR.
You could do a max HR ramp test if you want a true number, or simply stop worrying about it.0 -
If you feel fine while it happens and after, I'd say don't worry about it. Age estimates of max heart rate are incorrect for quite a few people.
My heart rate goes over my age-estimated max (of 157) at least a couple of times a week. My actual max (tested) is actually around 180.
If you feel bad when it happens (and by "bad" I mean something worse than just feeling like you're working pretty hard - faint, dizzy, unusual heart pounding or pains, headache, etc.) see your doctor. If it worries you even if you feel OK, ask about it at your next regular doctor visit.0
