I have a bake sale at work Monday and many of us watch what we eat.

    You don't think low calorie options can taste good?

    Decided to make some cottage cheese melon boats and carrot and raisin salad that I found on pintrest but would love more sweet ideas.

    i think most low calorie special recipes make so many substitutes that it losing its joy de vivre - maybe pick a favorite recipe and see if you can miniturize it for servings - instead of 1 large cookie - make 2-3 smaller ones - they are more calorie friendly while keeping the original thought

    or you could look to something like mini meringues (sugar and egg whites) with some whipped cream and fresh fruit

    Make something that is mostly fruit based. It'll still be sweet. Something like a mini parfait- sugar free vanilla pudding, berries, and a bit of crumbled sugar cookie and mini chocolate chips.

    Let's keep in mind that cookie recipes are often under 200 apiece. This one, for example comes in at 90 calories per cookie:

(One thing to note: with no leavening agent and a lot of butter, they spread out a lot when they bake. I never have any problems breaking them apart, 4 in a row, 6 rows on a cookie sheet, but don't crowd them.)

    This week, I made an angel cake pudding. My angel food cake is from a mix. 4 cups of cubes is roughly half the cake:


    4 cups, Angel Food Cake, cubed
    0.33 cup (not packed), Raisins, seedless
    3 large, Egg whites
    4 tbsp(s), Sugar
    2 tsp(s), Vanilla extract
    500 mls, Almond Breeze Unsweetened (Or skim milk, or other milk alternative, unsweetened.
    2 tsp, Sugars, granulated
    0.25 tsp(s), Spices, cinnamon, ground

    Preheat oven to 350. Lightly grease an 8x8 pan and put cake and raisins in. Whisk together egg whites, 4 tbsp sugar, vanilla and milk/milk substitute. Pour over cake and raisins and let stand 5 minutes.

    Combine 2 tsp sugar with 1/4 tsp cinnamon and sprinkle on top.

    Bake 40-45 minutes until the top browns. Serves 8.

    I use a 1 T scoop and get 32 cookies, bringing the calories down to 94 each. (I also replace the 1 cup chocolate chips with 2 oz nuts as they are plenty chocolatey already.)

    These are spicy, so a nice change of pace, but if nobody is a fan of spice, omit the two peppers.

    I'm running low on Kahlua so used an orange liqueur last time - yum!

    If you can't find currants you could use raisins, but you should chop them, which is a PITA, so try to find currants.

    My go-to cookie is Alton Brown's The Chewy: https://www.foodnetwork.com/recipes/alton-brown/the-chewy-recipe-1909046. I make them with a 1.5 tbsp. scoop so they are smaller (or "normal cookie size" in my opinion) and therefore under 100 calories each.

    I also make rum balls: https://www.tasteofhome.com/recipes/rum-balls/. Maybe this is a Southern holiday thing? They're very easy no-bake bites and very rich, and I also make them small enough to be about 100 calories each. I hear some people make them with bourbon instead, some people use chocolate wafers, walnuts instead of pecans, etc. There's very little alcohol per cookie...assuming no one eats the whole batch...but I don't know how well non-alcoholic rum extract would work if your workplace would be really concerned about it.

    • To reduce cost, I use walnuts instead of pecans
    • Since Nilla Wafers contains artificial flavor, I use graham crackers instead. These are also cheaper, and available in crumbs, so you can skip that step.
