Healthy pumpkin pie alternative?
I want to make a pumpkin dessert just for myself. I don't want to make a whole pie because I'd eat the whole thing and while the pumpkin itself is pretty healthy, I don't need all those calories that comes with the crust. Any ideas on a healthy alternative? Pie in a microwaved mug? Make it protein-heavy somehow?

I'm not sure if it would be a satisfying sub for pumpkin pie, but I combine equal parts plain Greek yogurt and pumpkin pie filling, then add a scoop of vanilla whey protein powder and some pumpkin pie spice. I eat it with a few mini graham crackers for crunch. I have this for breakfast or a mid day snack sometimes.6

I have also used nonfat evaporated milk as well as sweetened with splenda instead of sugar. Get sugar free tub of whipped cream and this is a keeper for thanksgiving.0 -
