What do I do with eggplant?

    Peel and slice thin. Place on broiling pan. Top with sweet or red onions. Add spices/garlic if desired. Broil. Add cheese and broil until melted. Yum! Also can be added into stir fries. Or dredge in egg and then flour (I'm gluten free so I use almond meal mixed with salt and pepper). Spray with Pam or use a little oil. Bake or use frying pan.

    I like to cut it up in cubes and eat it with spaghetti sauce!! I saute it with spices/garlic/bit of oil first, but thats how I eat it!!

    Lazy man (me) version...

    Cut off top and bottom end. Slice length wise to get slabs about 1/4" thick, except the first two slices are from opposites sides, very thin to get rid of a bunch of peel. The other slices will have peel around the outside edge. That's fine. Put in a bag with Italian dressing about 10 minutes. Grill fairly short amount of time, flipping once. Melt pepper jack cheese slice on top after flipping.

    I love eggplant this way. Knife and fork like it's a steak or in a hoagie bun.

    I make this minus the oyster sauce, shrimp, and beef. I had the vegetarian version first. It's a perfectly lovely vegetarian dish without those additions but would be good with the meat too.

    Eggplant can absorb a ton of oil. Here are some reasonably light cooking methods:

    Slice half inch rounds. Brush or spray with a little olive oil. Grill both sides on cast iron griddle pan.

    Bake whole in oven, scoop out flesh and make baba ganoush.

    Baba Ghanoush

    Aubergines, garlic, lemon juice, tahini and olive oil served with warm flatbread

    Pierce the skins of 3 large aubergines with a fork then grill over hot coals or the flame of a gas hob till the skin has charred and the flesh is very soft.

    Scrape the flesh from the charred skin and whisk with 2 crushed cloves of garlic, the juice of a small lemon, 2 or 3 heaped tablespoons of tahini paste and 3 or 4 tablespoons of olive oil and a grinding of salt and pepper.

    You can serve it topped with toasted cumin seeds, pomegranate seeds, or pomegranate molasses.

    It tends to be a little bit less in kcals than hummus and tastes so much nicer.

    118 - 140kcals for 6 portions

    Eggplant Parm Casserole....the best! You make it the same way you'd make eggplant parm except you place the fried, battered eggplants in a pan (usually one of the clear ones), pour tomato sauce (that'd you'd put on spaghetti; i know people call it different names), and then a lot of shredded cheese. Put it in the oven at 350 and it should be done after about 15 minutes or so. This meal is meant to be shared.

    I slice it....roast it....use it as the noodle layer in lasagna. Smoky and delicious!

    Here's a super easy salad recipe. You'll need an eggplant, a small tomato, half a small onion and your choice of vinaigrette.

    1. Roast the eggplant over flame (stove flame works just as well) until the skin is charred. And I mean charcoal charred.
    2. Run under tap water and peel off the now papery skin.
    3. Chop the peeled eggplant, tomato and onion. I like them finely chopped
    4. Mix the eggplant, tomato, onions and vinaigrette. For the vinaigrette, I just mix and match vinegar, honey, oil, and lemon juice, whichever I've got on hand.
    5. Profit!

    loooove eggplant parmigiana. eggplant has a nice meatiness to it and absorbs flavor like a sponge, so an eggplant parmigiana is really about the marinara. find a good one you like and follow that recipe above.

    now i'm hungry for eggplant.

    Bump...just bought an eggplant so looking for more idea's
