So my wife made organic elbows with organic sauce and ground beef. How do you count this meal since it is already all mixed together?

Mixing things together doesn't change the calorie composition and most people who are eating mixed meals are operating from the assumption that they're getting a consistent amount of each ingredient in every portion. Ideally, I would take the weight of each item used in the recipe and then weigh out my portion.

If your wife is like my husband and doesn't weigh things when cooking, I would just ask approximately how much of each item was used and make my best estimate of how much of the total recipe I had. It's an estimate, but it gets the job done (for me).

Organic won't change the calorie count. I'd eyeball. Does the sauce she used have a container, or did she make her own? Look at the container to see how many calories it has. If it's homemade, ask her what she put in it. Pasta swells when cooked. Ground beef--try to decide if there's enough to make a hamburger.
