If it was a pint I used to account for the whole thing in let's say a few weeks and log it each week, so I'd split it up into 1/3 for example and it all evened out in the end because I'd eventually have the whole thing. That wouldn't work if you were sharing I suppose. Some people get the weight of the container at one point, then weigh the whole thing with ice cream and that equals the total amount. Then you can weigh your serving and figure it out. It's really annoying in the end so for the larger containers I just said "ya this is a serving" and crossed my fingers haha.1

Unfortunately in Canada some ice creams don't list the weight on the container or in the database. It is so frustrating1
