I watched several youtube videos about how to do varied prep meals and what to eat ...etc. What I noticed is that the meals size I see in those video are far smaller than mine regarding the volume, the weight and macros. I’m I doing something wrong ? Or these youtubers are messing with us? 😂 thx!

You haven't told us how big or active they are. You haven't told us how big or active you are. You haven't told us whether you're trying to gain, lose, or maintain weight. You haven't told us whether your current (larger than theirs) meals are causing you to currently gain, lose, or maintain weight. You haven't given any indication of the difference in macro composition or other characteristics of their food vs. yours. I could keep going on, but . . . basically, you've given us no basis for even trying to answer your questions.

Personally, when I prepare meals, I use my own carefully set calorie & nutrient goals as a guide, and don't worry about others' portion sizes, food choices (big/small, heavy/light foods), macronutrient preferences, or tastes.
So that's what I'd suggest you do: Carefully consider your goals, set your MFP profile accordingly, and eat to stay within a reasonable approximation of your calories and macro goals.
If YouTube preppers can help you with that, swell. If not, ignore them.
