Instant pot/ quick and easy meal prep

I need to start meal prep for the entire week. Sometimes I'll cook chicken in salsa in the instant pot and eat on it for 3 days, then I get tired of it. What's a good way to cook chicken in the instantpot that I can use for many different recipes? Have also cooked in chicken broth but it's just so bland...need something with a little more kick.

    Taco seasoning is great and I kinda like it better with ground turkey but you could also use ground chicken - and I use either of those for chili (tomatoes, chili powder, cumin, paprika, whatever) or bolognese (tomatoes, oregano, garlic). Have you seen the rotisserie and lemon pepper kinda spice pots you can get? I'd try broth and some of those. Both of those I mentioned taste good, and I found a sweet onion one I think and there are a couple others. Also you could try green salsa for a bit of a change.

    How about different ethnic inspirations? Such as curry chicken, or Thai chicken?

    I used to make harissa chicken (recipe from Skinnytaste) and have had it with quinoa, rice or even as part of a wrap (lettuce and bread). I usually have cucumber with it as the sauce has a nice hit of spice.

    I make a bunch of chicken breasts then shred it with my hand mixer. Then I put it over rice with some gravy, use it as filling for baked taquitos, chicken tacos, or quesadillas. I use it in noodle recipes as well. I'm a fairly picky eater, so I'm sure there are tons more recipes you can make with shredded chicken if you have a more adventurous palate!
