How much coconut flour should I use in the recipe below, if I want to make moist banana muffins?
I am going to use coconut flour instead of the all purpose flour, and the recipe calls for 2 cups of all purpose flour. Help please!
I attached the recipe picture below.

Coconut flour absorbs a ton of moisture. The link above looks great! When trying to make up or sub it in to your own recipes start with tiny batches to test, and use about 1/4-1/3 the amount of coconut flour vs wheat flour called for in the recipe. Play with fat and moisture levels and you should be able to adjust the recipe to suit you, just do small batches and write everything down so when you get it right you don’t forget the exact measurements you like.0
