What are some of your go-to make ahead/freezer meals. I am allergic to seafood, but other than that, anything goes. I have 3 more days at home with the kiddos for Christmas break, so I figured this is as good a time as any to actually plan ahead instead of always just talking about it.

I like to make a big batch of Cuban Rice and Beans and eat it throughout the week. Sometimes I will have a smaller portion with an egg for breakfast.
I also like to roast or spatchcock a chicken and do different things with the leftovers throughout the week, and save the bones to make stock.
Anything with a lot of liquid freezes well, so your favorite soups and stews. Here are some of mine:- Chicken cacciatore
- Beef stew
