I have one left and want to eat it tomorrow for lunch. What would you do with it?

I like your idea. Is it fresh or frozen? What facilities do you have available for cooking it?1

It's frozen and I usually cook them in my IP so it ends up basically steamed. I have a well stocked kitchen. I've done curries before, and a Brazilian-esque fish stew.0

I'm intrigued, never thought of hummus with the fish. May leave out the mayo if I do this...1 -
I would flour lightly and pan fry in butter, add a squeeze of lemon, or make khmer lime and pepper sauce to go on it.

Pan frying it is exactly what I was thinking. It would also be good cooked en papillote with lemons (preserved if you have any), capers, and maybe fennel.1
