South beach phase 1 friendly Egg soufflé-ish thing
Options

Just layer your veggies/meats/cheese of choice into an oven safe dish and poor beaten eggs over the top. Bake at 375 until puffed and golden brown. This one has:
Mushrooms
Green onion
Deli ham
Red bell pepper
Spinach
Grape tomato
Goat cheese
Low-fat mozzarella
Cilantro

It was really good and quite filling!! Easy breakfast

I love south beach recipes. I did the diet when I was a teenager and lost 100lbs doing so. But as an adult it doesnt work with my life, but I use the recipes often!0
