Healthy, green tapas dishes

I've got the family birthday coming up (both kids and me are from january) and my kids have decided they want tapas. I have rather long list of delicious meaty and fat dishes already, but since it is january all the women in the family are likely to be dieting and want vegetables.
So does anyone have ideas for tapas dishes that are green and low in fat? (I'm on the northern hemisphere so we have winter wink: )

Also grilled vegetable slices such as courgette and aubergine. Shake in a plastic bag with a little olive oil and grill on a griddle pan. Ditto green asparagus if you don't mind getting them from far away out of season. Peeled paprikas. If roasting and peeling is too much work you buy these in jars from the supermarket and just drizzle with a little olive oil.

Also padron peppers. Though fried, they don't absorb any oil.0

I love grilled, peeled paprikas...but it takes forever..especially as I eat most of them while making them. The marinated carrots look great - I'll certainly try those at some point

The marinated carrots are dead easy and totally delish. First ate them on vacation in Portugal and immediately googled for the recipe when I got home.
I find grilled and peeled paprikas a little less work if you quarter them, de-seed and lay them skin side up in a cookie sheet under the broiler. However, the trade off of not having to remove the seeds is that there less of that delicious juice from when you roast them whole. The ready made ones you can get in jars in the supermarket tend to be more acidic, so not quite as good.0
