What am I doing wrong? Ready to quit

I have been religiously logging in my food and always have a deficit of at least 100 calories that I don't eat. I also have been walking over 12,000 steps and getting extra exercise calories but I have not been using them. I originally started off and lost 8 pounds over 3 weeks but this last week the scale has said that I have gained 5 pounds and I know that I have not eaten that much to gain the 5 pounds. I am sooo stressed and don't know what is going on. Is it water retention? I did have some Chinese food last week, is it weight from my period? HELP!!!!

Yes water retention, yes probably from Chinese food or your period.
Completely normal. Weight loss isn't linear.6 -
could be the takeaway, could be Flo!
other things I would check are whether your scales need a new battery (if they're digital) did you weigh in the same place and on even floor?
do you weigh your food?
just trust the process as hard as that is, dont give up or else you wont get anywhere then!
weightloss isn't linear and make sure you drink drink drink water!0 -
Your body can only metabolize about 1% body fat in a week.
You lost 8 lbs in 3 weeks, so unless you weigh over 300 lbs, then the majority of what you lost is water.
Water weight will fluctuate greatly, and is definitely influenced by monthly hormone swings, so don't panic, it will come back off again.2 -
This is completely normal and nothing to worry about yet. I know that's easy to say and harder to believe sometimes, but most women see the scale jump a little higher on their period. Most people will also see the scale jump a little higher after a high sodium meal. In both cases it's water retention and in both cases it's the body doing what it's supposed to do. I prefer not to get on the scale when I suspect it will be higher from these sorts of things, but others like to track fluctuations like this because they like the data. How you choose to handle it is up to you, but you might find using a trend weight app (Happy Scale, Libra, Trendweight, etc) might help you to see how normal these fluctuations are and give you some peace of mind.4

If you're weighing on different scales now that's probably got something to do with it as well.2 -

Thanks for the article.....very helpful. The diagram of the week is sooo me...I need to just step away from the scale and keep at it. My tummy is getting flatter, my husband even noticed.3

This is completely normal. Try to realx. I know it's difficult... You'll hear it a million times, but weight loss isn't linear. Your weight will go up, down and stall. And not necessarily in that order. A lot of people like to use a weight trending app on their phone and weigh daily. It will help you see trends, particularly if you've eaten a high sodium meal the day before or if your getting your period. Just a thought. Good luck. And DON'T QUIT.0

yes..the Chinese food did you in.. all that sodium. It is false weight.. don't be so dramatic.. yet. .I totally understand.. when you first diet you think you're cursed and going to be stuck being fat. Not so.. if you are eating healthy..moving more.. you are going to lose weight! AS you keep working at it.. and it comes off you will feel more in control and figure out patterns...like eating Chinese food puts five pounds of water weight on you.0

Normal! Worst thing we can do is fret
Relax and enjoy the ride your body
is still working its thing. As long as you keep true, plateaus or weird gains like that are your body taking the time to work through an adjustment

Just breath (easier said than done, I know!lol) This happened to me to this week. I had a cheat meal (which was pizza) and gained back 4 pounds overnight. It happens. Just keep at it and it should come right back off and then some.1
