Anyone know how to track beachbody workouts more accurately? I have a Fitbit but... still having trouble.

Think about the types of moves you're doing in the particular Beachbody workout. Compare your fitbit results to the closest MFP exercise category (circuit training or calisthenics or aerobics are some potential choices, depending on the thing you're doing). Log the lower of what your fitbit says, or the closest relevant MFP exercise.
Do that consistently, and stick with your routine. In 4-6 weeks, evaluate your average weight loss. If you're losing at a sensible rate**, continue. If you're losing too slowly or too fast, adjust your intake.
** Many people around here think a reasonable rule of thumb is that you should lose no more than 1% of body weight per week on average, slower if within 50 pounds of goal, possibly faster if severely obese and under close medical supervision.0
