Low-Carb Logging Issues

Hi there, I’m currently eating a low-carb diet in a (medically advised) attempt to control nocturnal seizures. I’ve noticed that logging (as a UK MFP user) is a pretty confusing task and I wondered if anyone had any suggestions?
My issue is this; I understand the premise of subtracting dietary-fibre from carbs to attain actual net-carbs, BUT, that isn’t actually an accurate option due to the fact the foods inputted by users to the MFP database are a mismatch of labels from the Uk (which, I believe are already calculated in net-carbs) and from other territories where they aren’t... I only spotted this today because when I subtracted the fibre from the carbs the result was in minus numbers. Would people suggest not using any generic items whilst inputting food items or maybe even specifically looking for only stuff in the database for things from a Uk supermarket, even if it is from a market (broccoli for example)... and maybe that way, I could just assume everything to already be calculated in net-carbs?.
Either that, or do the reverse and use only US versions of things I eat (and then do the maths).
I hope that had some semblance of logic and didn’t sound like the ramblings of a madman! Ha.
Maybe I’m over complicating things and the humble pencil and paper needs to make a return.
