    I love the Budget Bytes black bean soup. You can throw everything, including dry black beans, into a slow cooker. Everything's adjustable according to your taste. I occasionally add sausage and more veggies. https://www.budgetbytes.com/slow-cooker-black-bean-soup/

    Lemon Chicken/Chickpea Soup

    Chicken Broth
    Chicken or Canned Chickpeas
    Olive Oil
    Lemon Juice
    Rice or Orzo
    Salt & Pepper

    Optional: Carrots, garlic, onion, parsley, thyme, oregano, chicken bouillon

    1. If using chicken, brown it in the bottom of the pot with olive oil. If using carrots, garlic, onion, add it after chicken is mostly done and saute until soft.
    2. Add the chicken broth, lemon juice, salt, pepper, chicken bouillon and herbs (if using). If you chose to use the canned chickpeas instead of the chicken, add them now.
    3. Bring to a boil and then add the rice or orzo. Continue cooking until rice or orzo is done.
    4. Taste and adjust lemon juice, salt & pepper and chicken bouillon to taste.

    Sorry that I don't have measurements. I just eye it and taste until its right.

    Cook's Illustrated has a lot of easy and delicious soup recipes. I like the corn chowder, Tuscan white bean and escarole, and Provencal vegetable soup.

    We do a spicy soup variation regularly. Chicken, beef or vegetable broth with leek, carrots, corn, one can rotel tomatoes, taco seasoning, black beans and our protein of choice - usually chicken, hamburger or ground turkey meat.

    We also do a fish chowder with haddock, leek, potato, corn, broth and heavy cream
