i’m wondering what are some good foods to eat to help with losing weight while struggling with hashimotos/hypothyroidism? i’ve had little success with simply eating healthier and eating less. i have been trying to lose weight for years now and haven’t been able to. i will also try to start logging my foods more consistently.

The bolded is the thing. If you can't seem to lose weight, then consistently tightening up logging - for 4-6 weeks if not forever - will give you great insight into where the problem lies. It could be that your goal calories are too high for you personally; it could be that exercise calories or activity level are overestimated (common problem); it could be inaccurate food logging. Not everyone needs to log and weigh food to lose weight, but it's a good strategy for people who "can't lose weight" to use to figure out where things are going wrong.
Most of the effects of hypothyroidism on weight come from appetite, fatigue, or water weight. Being properly medicated - which takes time to dial in, with gradual dosage adjustments based on regular repeated blood tests at first - helps with those. But the actual "metabolic" penalty for even untreated hypothyroidism is arithmetically pretty small.
I'm hypothyroid - pretty severely, but well-controlled with meds. Once I committed myself to the process, losing weight was just as easy (or not ) for me as it is for non-hypothyroid people. I've been at a healthy weight for 3+ years now, and was able to do that while hypothyroid and pretty old besides (I'm 63 now).
Focus on the things you can control, the basics: Log accurately (weighing food will help, and it's quick when you learn the tricks); hit your calorie goal the overwhelming majority of the time; don't try to lose too fast (to make it sustainable long term); keep your daily life activity going; and add some manageable/fun exercise-type leisure activities if you can fit them in.
