WFPB diet for beginner

Congrats!! Amazing work. I’m 5’1” and weigh 183. I’m just starting WFPB again. A few years ago I tried it for 4 weeks and felt great. Lost 10 lbs and cholesterol level dropped 50 points. And than I went on vacation and fell off the wagon and have struggled to get buck up. Could you share what your average daily menu looks like?

Overnight oats made with steel cut oats, vanilla soy milk, cacao powder & nibs, chia, flax & hemp seeds for breakfast.
Lunch this week has been pinto beans with pico de gallo and guacamole.
Dinner varies - last night it was KFC cauliflower (see brandnewvegan.com), the night before it was sweet potato with seitan taco meat with pico and guac. Tonight its homemade pizza with vegan "mozzarella" and tons of veggies.1
