I noticed after cooking my mashed cauliflower and weighting it after it was done cooking it the grams on my scale was going down, strangely this also happen on other foods like rice, beans. So my question is should i wait for foods to cool down before weighting them fresh hot and if so can someone explain the science to me why this is happening thanks.

Your best bet is to weigh them before cooking and make sure you use a "dry" or "raw" entry. What is happening is the steam is rising from the cooked foods which is why the weight is going down. This is just water and has no bearing on the actual calorie content. If you weigh before cooking, you eliminate a lot of variables. Just make sure you allow for anything with calories added while cooking. Typically for things like rice, pasta, and steamed veggies you are not adding calories, just sodium if you add salt to the water.2 -
as much as i can i weight pre-cooking (raw). depending how you cook and how much water the weighing "cooked" can be innacurate.1

If you are trying to determine the final weight of a recipe to input serving sizes in the recipe builder you can wait I suppose. I never have.1

I wait for food to cool down.
If you are making a single serving size, yes weigh before cooking. But if you are making multiple servings and need to measure yours out after cooking then give it a couple minutes to cool.0 -
yes i always weight my food precook, but for other reasons like large batches example like rice i cook more then one serving in my instantpot and would like to accurately measure out the rice since I wont be eating all that rice in one day thanks.0

Still weigh it precooked and divide it into however many servings you decided on before cooking.
For example: the rice I like is 50 grams per serving, dry. I want to make 6 servings. I weigh out 300 grams and put it in the pot with the appropriate amount of water and cook. When it is done, I divide it into 6 portions and eat one. That way I still eat 180 calories no matter if I allowed steam to escape or not.1
