What are some healthy food prep meals you guys make for breaks fast/lunch

If I am packing my lunch:
A turkey sandwich with provolone and romaine, or a pan of lasagna made with lots of veg in the sauce (tomatoes, zucc, summer squash, eggplant, and/or mushrooms), carefully cut into smaller portions and weighted out (300 g or less), plus several bags of prepared fruit and veg. Today I have 275 g sliced honeycrisp apple, 170 g red raspberries, 150 g snap peas, 150 g sliced orange bell pepper, and a couple ounces of hummus. I probably won't eat it all but it is there for snacking if I need it.
(I spend a few minutes Sunday night doing a lot of chopping and portioning).
For breakfast, if packing: steel cut oats cooked with milk and raisins or blueberries, and a bit of heavy cream. Or just some hummus (2 oz), pretzels (1 oz) and fruit. Or Greek yogurt with honey, a hard boiled egg, and fruit. Or a cup of coffee, a biscotti, and a banana.1
