This one uses canned beans, so no soaking. I personally substitute vegetable broth for the chicken broth.

But don't knock soaking beans before you try it! It's super-easy, you just put some beans in water, wait overnight, and then boom! They're soaked.

Mine is really simple. Puree two cans of black beans with one can Rotel tomatoes. Add another can of black beans, don't puree. Add cumin to taste. (Recipe says a tablespoon, but I think that's too much). Heat and serve.
It's good with avocado, sour cream, chips, green onions, diced tomatoes, cheese, or nothing.

    Another super easy one:

2 cans of black beans (drained)
1 jar (16 oz) of your favorite salsa
    1 diced onion
    1 diced green bell pepper
    2 cups water
    ½ Tblsp cumin
    2 tsp garlic powder

Bring it to a boil, turn to medium heat and cook until onions and peppers are cooked through - about 20 minutes.
