Moms, what are your healthy, kid-friendly dinners?

I'm having a hard time staying on track and dinner (and dinner time stress) is a big factor to it. I'm really running out of creativity when it comes to dinner. I'm tired of feeding them processed junk because it's what they'll eat and it's easy. I'm not up to cooking two meals (unless I'm doing something like baking salmon and fish sticks at the same time).When I do take the time to cook and they don't eat it I'll pick at what's on their plates when they've run off to play. My husband is in Afghanistan, so it's not like I need to make a nice, big meat and potatoes kind of meal. Just something nutritious to fill our bellies and simple being the biggest factor. I have no time to cook!
I have a 5 year old who is semi-picky (nothing spicy, no beans, typical) and a 2 year old that has too much energy to sit still long but will eat almost anything.
So, what are your ideas? Throw 'em at me!
