Best Dinner Ever (the hits keep coming!)

Every dinner is the best! been cooking a lot and loving it....i keep experimenting and having fun. here's what I made for dinner tonight....so good and easy and whole! Cooking for one is fun!
Dijon Chicken, Sauteed Kale, Roasted Carrots
(the carrots carmelize on their own....they were almost like dessert!)
Dijon Chicken Breast:
stir 1 tablespoon olive oil with whole grain mustard / dijon mustard to taste (i like a full tablespoon but that's a lot!)
coat chicken breast (boneless, skinless) in mustard and place in baking dish. cover with foil. bake at 350 20-35 minutes (depends on size of chicken)
Sauteed Kale:
squeeze 1/2 fresh lemon into sautee pan, stir in one clove minced garlic
toss Kale until heated, but not brown. remove from stove while still green
Roasted Carrots
spray cookie sheet with non stick spray (i use olive oil non stick)
line up raw carrots (peeled, tips cut off) on cookie sheet
roast for approx 40 -60 minutes (depends on size - keep checking)

Sounds awesome. I've been looking for different ways to do Kale, going to try this.
I could live on roasted veggies, on a pumpkin bender at the moment.0 -

Me too! I am so into roasted veggies. Brussel sprouts, artichoke, broccoli - i have been roasting all of them!
I don't toss the carrots in anything, but i like tossing the brussel sprouts, broccoli and the artichoke in olive oil and fresh lemon juice before roasting.

Hi there - I made 4 carrots last night but it's really up to you.
I made 2 cups of kale as well, but I like to go overboard. In fact yesterday i was under my calorie goal, so maybe I needed to make more (!!!!)
Regarding the oven temp, you can cook the chicken at 425 and then roast the chicken and carrots in the same oven. for the same amount of time and both will be done at the same time. I didn't start the kale until about 10 minutes before the chicken and carrots would be ready.0
